Method

Preparing the Vada

    Cook the Potatoes

    Boil the potatoes in water until tender. Once cooked, peel and mash them in a bowl.

    Make the Spice Mix

    In a pan, heat a tablespoon of oil over medium heat. Add mustard seeds and cumin seeds. Once they splutter, add chopped green chilies, ginger, turmeric powder, coriander powder, and salt. Sauté for 2-3 minutes.

    Combine Ingredients

    Add the spice mix to the mashed potatoes and mix well. Allow the mixture to cool, then form small balls (vada) with your hands.

Batter Preparation

    Make the Chickpea Batter

    In a bowl, mix chickpea flour with water to form a smooth batter. The consistency should be thick enough to coat the potato balls.

Frying the Vada

    Heat Oil

    In a deep pan, heat oil on medium-high heat for frying.

    Fry the Vada

    Dip each potato ball into the chickpea batter, ensuring they are fully coated. Carefully drop them into the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

Preparing the Pav

    Toast the Pav

    In a skillet, melt butter over medium heat. Place the pav rolls in the skillet and toast until golden brown on both sides.

Assembling the Vada Pav

    Assemble the Dish

    Slice the toasted pav horizontally, and place a fried vada in between. Add chutney and fried green chilies as desired.
