For the Paneer Patties

    Prepare the Paneer

    In a large pot, bring 2 liters of milk to a boil. Once boiling, reduce the heat and gradually add lemon juice while stirring gently until the milk curdles. Remove from heat and let it sit for 5 minutes.

    Strain the Curdled Milk

    Line a sieve with a muslin cloth or cheesecloth. Pour the curdled milk into the sieve to separate the curds from the whey. Rinse the curds under cold water to remove the sourness from the lemon.

    Knead the Paneer

    Gather the corners of the cloth and squeeze to remove excess water. Transfer the paneer to a plate and knead it for about 5-7 minutes until smooth.

    Form the Patties

    Add 2 tablespoons of all-purpose flour and cardamom powder to the kneaded paneer. Mix well. Divide the mixture into small balls and flatten them slightly to form patties.

For the Sugar Syrup

    Prepare the Syrup

    In a pot, combine 4 cups of water and 1 cup of sugar. Add 4 whole cardamom pods and bring it to a boil, stirring until the sugar dissolves completely. Let it simmer for 5 minutes.

    Cook the Patties

    Gently drop the paneer patties into the boiling sugar syrup. Allow them to cook for about 10-12 minutes until they double in size. Remove from heat and let them soak in the syrup.

For the Creamy Sauce

    Prepare the Creamy Sauce

    In another pot, heat 1 liter of milk on medium heat. Add the saffron strands and 1 cup of sugar. Stir continuously until the sugar dissolves, and bring to a gentle simmer. Cook for about 15 minutes until the sauce thickens slightly.

    Combine and Serve

    Add the soaked paneer patties to the creamy sauce and allow them to simmer for another 5 minutes. Garnish with chopped pistachios and almonds before serving.
