Preparation of Vegetables

    Boil the Vegetables

    In a large pot, add the potatoes, green peas, cauliflower, and carrots. Fill with water and bring to a boil. Cook until all vegetables are soft, about 15-20 minutes. Drain and set aside.

    Chop the Other Vegetables

    Finely chop the onion, bell pepper, and tomatoes. Set aside.

Cooking the Bhaji

    Sauté the Onions

    In a large skillet, heat 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add Tomatoes and Spices

    Add the chopped tomatoes, ginger-garlic paste, and green chilies to the skillet. Cook until the tomatoes are soft and the oil begins to separate, about 5-7 minutes.

    Mix the Vegetables

    Add the boiled vegetables to the skillet. Use a potato masher to mash the mixture until you have a semi-smooth consistency.

    Season the Bhaji

    Stir in the pav bhaji masala, turmeric powder, and salt. Mix well and cook for an additional 5-10 minutes, stirring occasionally.

    Garnish

    Chop the cilantro and sprinkle it over the bhaji before serving.

Preparing the Pav

    Toast the Pav

    In a separate skillet, melt the remaining 2 tablespoons of butter over medium heat. Place the pav pieces cut-side down and toast until golden brown, about 2-3 minutes.

Serving

    Plate the Bhaji

    Serve the hot bhaji in a bowl, topped with a dollop of butter.

    Accompany with Pav

    Serve the toasted pav alongside the bhaji, and garnish with lemon wedges.
