    Wash and Chop Vegetables

    Thoroughly wash all the vegetables (carrots, radishes, cucumbers, green mangoes, and lemons) under running water. Peel if necessary and chop them into small, bite-sized pieces.

    Mix Vegetables

    In a large mixing bowl, combine all the chopped vegetables.

Spice Preparation

    Mix Spices

    In a small bowl, combine the salt, turmeric powder, red chili powder, mustard seeds, and fenugreek seeds. Mix well to ensure even distribution of spices.

    Add Asafoetida

    Add the asafoetida to the spice mixture and mix again.

Pickling Process

    Combine Vegetables and Spices

    Add the spice mixture to the bowl of chopped vegetables. Mix well to coat the vegetables evenly with the spices.

    Add Mustard Oil

    Pour the mustard oil over the spiced vegetables. Mix thoroughly to ensure that all vegetables are well coated with oil.

    Pack and Store

    Transfer the mixture into a clean, dry glass jar. Make sure to pack it tightly. Seal the jar with a lid.

    Fermentation

    Store the jar in a warm place for 2-3 days to allow the flavors to develop. Shake the jar gently once a day.
