Prepare the Mangoes
Peel, pit, and chop the ripe mangoes into small pieces. You should have about 2 cups of diced mango.

Cook the Base
In a medium saucepan, combine the chopped mangoes, brown sugar, chopped onion, grated ginger, minced garlic, apple cider vinegar, and water. Stir to combine.

Add Spices
Add cumin seeds, coriander powder, turmeric powder, red chili flakes, and salt to the saucepan. Mix well.

Simmer the Mixture
Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer uncovered for about 30 minutes, stirring occasionally, until the chutney thickens.

Cool and Store
Remove the saucepan from heat and let the chutney cool to room temperature. Once cooled, transfer the chutney to a clean jar and store it in the refrigerator.
