Pav (Toasted Bread)

Method

Prepare Egg Mixture

    Whisk the Eggs

    In a bowl, crack the eggs and whisk them until well blended. Set aside.

    Sauté Onions

    In a large skillet, heat 2 tablespoons of oil or butter over medium heat. Add the chopped onions and sauté until they turn translucent, about 3-4 minutes.

    Add Tomatoes and Season

    Add the chopped tomatoes to the skillet and cook for another 2-3 minutes until they soften. Season with salt and black pepper.

    Cook the Eggs

    Pour the whisked eggs into the skillet. Stir gently to scramble the eggs with the onion and tomato mixture. Cook until the eggs are just set, about 3-5 minutes.

    Add Cheese and Cilantro

    Once the eggs are cooked, sprinkle the grated cheese and chopped cilantro over the top. Stir gently until the cheese melts and everything is well combined.

Prepare the Pav

    Toast the Pav

    In a separate pan, melt 2 tablespoons of butter over medium heat. Place the pav (bread rolls) in the pan and toast them until golden brown on both sides, about 2-3 minutes per side.

Serve

    Plate the Dish

    Serve the hot egg burji on a plate alongside the toasted pav. Garnish with additional cilantro if desired.
