Prepare the Dough
In a mixing bowl, combine all-purpose flour, semolina, carom seeds, and salt. Gradually add water while kneading to form a firm dough. Cover with a damp cloth and let it rest for 30 minutes.

Roll the Papri
After resting, divide the dough into small balls. Roll each ball into thin circles (about 4 inches in diameter). Prick with a fork to avoid puffing while frying.

Fry the Papri
Heat oil in a deep frying pan over medium heat. Fry the rolled papris in batches until they turn golden brown and crispy. Remove and drain on paper towels. Allow them to cool.

Prepare the Toppings
In a bowl, mix the boiled diced potatoes with chaat masala and red chili powder. Set aside.

Assemble the Chaat
On a serving plate, arrange the crispy papris. Top with the spiced potato mixture, followed by a generous drizzle of whisked yogurt, tamarind chutney, and mint chutney.

Garnish and Serve
Sprinkle chopped coriander leaves and sev over the top. Serve immediately for the best crunch.
