Preparing the Dough

    Mix Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Mix well to ensure even distribution of the dry ingredients.

    Add Wet Ingredients

    Add the yogurt and oil to the dry mixture. Start mixing it with your hands or a spoon until it resembles coarse crumbs.

    Knead the Dough

    Gradually add water as needed while kneading the dough until it becomes smooth and elastic. This should take about 5-7 minutes. Cover the dough with a damp cloth and let it rest for at least 1-2 hours.

Frying the Bhaturas

    Heat the Oil

    In a deep frying pan or kadhai, heat the oil on medium-high heat. To check if the oil is hot enough, drop a small piece of dough into the oil; if it sizzles and rises to the surface, the oil is ready.

    Roll the Dough

    Take a portion of the rested dough and roll it into a ball. Flatten it slightly, then use a rolling pin to roll it out into a circle about 1/4 inch thick.

    Fry the Bhatura

    Carefully slide the rolled bhatura into the hot oil. It should puff up immediately. Fry until golden brown on both sides, about 1-2 minutes per side. Use a slotted spoon to remove it from the oil and drain on paper towels.

    Repeat

    Repeat the rolling and frying process with the remaining dough balls. Serve hot.
