In a large mixing bowl, combine whole wheat flour and salt. Gradually add water while kneading until the dough is smooth and pliable. Add oil and knead again for about 2-3 minutes. Cover the dough with a damp cloth and let it rest for 20 minutes.

Preparing the Filling
In a bowl, mix the boiled and mashed potatoes with boiled green peas. Add finely chopped green chili, cumin powder, coriander powder, garam masala, chopped coriander leaves, and salt. Mix well until all ingredients are evenly combined.

Divide the dough into equal-sized balls (about the size of a golf ball). Take one ball and flatten it slightly. Roll it out into a small circle (about 4 inches in diameter). Place a generous amount of the filling in the center, fold the dough over to seal it, and roll it out gently into a larger circle (about 6-7 inches in diameter). Heat a tawa or skillet over medium heat and add a little oil. Cook the paratha for about 2-3 minutes on each side, adding more oil if necessary, until golden brown and crispy. Repeat with the remaining dough and filling.
