Mix the Dough Ingredients
In a large mixing bowl, combine the all-purpose flour, yogurt, baking powder, and salt. Mix well.

Knead the Dough
Gradually add warm water and oil to the flour mixture. Knead until a soft and pliable dough forms. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine the boiled and mashed potatoes, chopped onions, green chilies, cilantro, garam masala, cumin powder, and salt. Mix until well combined.

Divide and Roll the Dough
After resting, divide the dough into equal portions (about 6-8). Take one portion, flatten it into a small disc, and place a generous amount of the potato filling in the center. Fold the edges over the filling and seal tightly.

Roll Out the Kulcha
Gently roll the stuffed dough ball into a flat round shape, about 6 inches in diameter, ensuring the filling does not spill out.

Cook the Kulcha
Heat a tava or non-stick skillet over medium heat. Place the rolled kulcha on the hot tava, cooking for about 2-3 minutes until bubbles form on the surface. Flip and brush with butter or ghee. Cook the other side until golden brown and cooked through. Repeat with remaining dough and filling.
