    Gather all the ingredients and prepare them accordingly. Slice the onions and jalapeños, chop the bacon, and shred the provolone cheese.

    Cook the Bacon

    In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.

    In the same skillet with the bacon fat, add olive oil if needed. Add the sliced onions and sauté until they begin to soften, about 3-4 minutes.
