Prepare Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold running water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed.

Season the Rice
In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat, let it sit covered for 10 minutes, then transfer to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Slice the Fish
Using a sharp knife, slice the fresh tuna and salmon into thin sashimi pieces.

Make Spicy Mayo

Mix the Ingredients
In a small bowl, combine the mayonnaise, Sriracha sauce, and lime juice. Stir until well combined.
Assemble and Serve

Assemble the Bowl
In a serving bowl, place a generous portion of the seasoned sushi rice at the bottom. Top with the arranged sashimi and vegetable toppings.

Add Spicy Mayo
Drizzle the spicy mayo over the top of the bowl or serve it on the side for dipping.
