    Wash the radishes thoroughly. Cut off the tops and tails, then slice them thinly into rounds.

    In a bowl, combine the sliced radishes with salt and rice vinegar. Toss well to combine. Let them sit for at least 30 minutes to pickle.

    In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and cold water. Whisk gently until just combined, ensuring not to overmix.
