Prepare Sushi Rice

Rinse Rice
Rinse the sushi rice under cold water until the water runs clear, then drain.

Cook Rice
Combine the rinsed rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.

Season Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, let it cool slightly, then mix in the vinegar mixture.
Prepare Fillings

Slice Fillings
Slice the tuna, salmon, crab meat, strawberries, and avocado into thin strips.

Prepare Spicy Mayo
In a small bowl, mix the spicy mayo with the leche for a creamy sauce.
Assemble the Sushi Rolls

Prepare Nori
Lay a nori sheet on a bamboo sushi mat, shiny side down.

Spread Rice
Wet your hands to prevent sticking, then take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

Add Fillings
Arrange the sliced fillings (tuna, salmon, crab, strawberries, avocado) in a line across the center of the rice.

Add Sauce
Drizzle the spicy mayo mixture over the fillings.

Roll Sushi
Using the bamboo mat, carefully roll the sushi away from you, pressing gently but firmly to secure the roll. Seal the edge of the nori with a little water.

Make Additional Rolls
Repeat with the remaining nori sheets and fillings.
Serve

Slice and Serve
Using a sharp knife, cut each roll into 6-8 pieces. Serve with soy sauce, pickled ginger, and wasabi if desired.
