    Cook the Jasmine Rice

    In a medium saucepan, combine 1 cup of jasmine rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.

    Prepare the Vegetables

    While the rice is cooking, slice the bell pepper and red onion. Rinse the snow peas under cold water and set aside.

Cook the Seafood and Curry

    Grill the Salmon

    Preheat your grill to medium-high heat. Season the salmon fillets with salt and pepper or your choice of seasoning. Grill the salmon for about 5-7 minutes on each side or until cooked through and flaky. Remove from grill and set aside.

    In a large pan, heat a teaspoon of oil over medium heat. Add the shrimp and sauté for about 2-3 minutes until they turn pink and opaque. Remove them from the pan and set aside.

    Add the grilled salmon and sautéed shrimp to the curry sauce. Gently mix to coat the seafood in the sauce, cooking for an additional 2-3 minutes until heated through.

    In a serving bowl, place a generous portion of jasmine rice at the bottom. Top with the shrimp and salmon curry mixture. Garnish with fresh cilantro and lime wedges.
