Prepare the Batter
In a large bowl, mix together all-purpose flour, cornstarch, baking powder, salt, and black pepper.

Make the Batter
Gradually add cold sparkling water to the dry ingredients, whisking until you have a smooth batter.

Heat Oil
Heat the oil in a deep frying pan to 180°C (350°F).

Fry the Fish
Dip each fish fillet into the batter, allowing excess to drip off, then carefully place them into the hot oil.

Finish Cooking
Fry the fish for about 4-5 minutes or until golden brown and cooked through. Remove with a slotted spoon and drain on paper towels.

Prepare the Potatoes
Peel the large potatoes and cut them into thick strips to form chips.

Wash and Dry
Rinse the potato strips in cold water to remove excess starch and pat them dry with a towel.

Heat Oil for Chips
In a deep frying pan, heat the oil to 180°C (350°F).

Fry the Chips
Fry the potato strips in batches for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels. Season with salt immediately.

Mix the Sauce
In a bowl, combine mayonnaise, lime juice, chopped coriander, chili sauce, minced garlic, and salt.

Stir well until all ingredients are fully incorporated. Taste and adjust seasoning if necessary.
