    Prepare Sushi Rice

    Rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

    Cook Sushi Rice

    In a rice cooker or pot, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat and simmer for about 20 minutes until water is absorbed.

    Season Rice

    Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Gently fold this mixture into the warm rice, being careful not to mash the grains. Let it cool to room temperature.

    Prepare Fillings

    Thinly slice the fresh tuna and salmon into long strips. Slice the avocado and cucumber into thin strips as well. Ensure the ebi is peeled and ready for use.

    Assemble the Roll

    Place a bamboo sushi mat on a flat surface. Lay one sheet of nori shiny side down on the mat. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Arrange a few strips of tuna, salmon, ebi, avocado, and cucumber in a line across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge closest to you and start rolling it away from you, tucking it tightly around the fillings. Continue rolling until you reach the bare edge of the nori. Use a little water to seal the edge.

    Slice the Roll

    Using a sharp knife, slice the roll into bite-sized pieces. Wipe the knife with a damp cloth between cuts to ensure clean slices.

    Serve

    Arrange the sliced rolls on a plate. Serve with soy sauce, wasabi, and pickled ginger on the side.
