Bao Bun Dough

Prepare the Dough
In a large bowl, mix the flour, instant yeast, sugar, baking powder, and salt together. Make a well in the center and add the warm water and vegetable oil. Mix until a rough dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

Shape the Bao Buns
Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball, then flatten into an oval shape. Place a piece of parchment paper under each bun to prevent sticking.

Marinate the Chicken
In a bowl, soak the chicken thighs in buttermilk for at least 30 minutes, or up to overnight for best results.

Prepare the Coating
In another bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Fry the Chicken
Heat oil in a large frying pan over medium-high heat. Remove chicken from buttermilk and dredge in the flour mixture. Once the oil is hot, carefully add the chicken and fry for about 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Bao
Steam the bao buns for about 10 minutes until puffy and cooked through. Once done, place a piece of fried chicken inside each bun, top with cucumber slices, cilantro leaves, and a drizzle of sriracha sauce. Serve immediately.
