    Prepare the ingredients

    Gather all the ingredients including corned beef, sauerkraut, Swiss cheese, Thousand Island dressing, rye bread, and optionally butter.

    Toast the rye bread (optional)

    If desired, spread butter on one side of each slice of rye bread. This will help achieve a crispy texture when grilling.

Assembly

    Layer the ingredients

    On the unbuttered side of one slice of rye bread, layer 2 oz of corned beef, followed by 1/4 cup of sauerkraut, a slice of Swiss cheese, and a tablespoon of Thousand Island dressing. Top with another slice of rye bread, making sure the buttered side is facing out.

    Repeat for additional sandwiches

    Repeat the layering process for the remaining slices of bread and ingredients to make additional Reuben sandwiches.

Cooking

    Grill the sandwich

    Heat a skillet over medium heat. Once hot, place the assembled sandwich in the skillet. Grill for about 3-4 minutes on one side until golden brown.

    Flip the sandwich

    Carefully flip the sandwich using a spatula and grill the other side for another 3-4 minutes or until the cheese is melted and the bread is golden brown.

Serving

    Slice and Serve

    Once cooked, remove the sandwich from the skillet. Let it rest for a minute, then slice in half and serve warm with extra Thousand Island dressing on the side.
