Preparation

1. Prepare the Ingredients

Gather all the ingredients and ensure that they are fresh. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocado with a fork and set aside.

2. Chop the Tomatoes and Spinach

Chop the cherry tomatoes in half and roughly chop the spinach leaves. Set aside.

3. Toast the Bread

In a toaster, toast the whole wheat bread slices until golden brown and crispy. Set aside.

4. Cook the Spinach

In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper. Remove from the skillet and set aside.

5. Fry the Eggs

In the same skillet, add another tablespoon of olive oil. Crack the eggs into the skillet, cooking them sunny-side up or to your desired doneness. Season with salt and pepper.

6. Assemble the Breakfast

On each slice of toasted bread, spread a generous amount of mashed avocado. Top with sautéed spinach, cooked eggs, and halved cherry tomatoes. Sprinkle shredded cheddar cheese over the top.
