Biscuit Preparation

Prepare Biscuit Dough
In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined. Do not overmix.

Shape and Bake Biscuits
Turn the dough out onto a floured surface and gently knead a few times. Pat into a 1-inch thick round. Cut into rounds using a biscuit cutter. Place on a baking sheet and bake at 425°F (220°C) for 15-20 minutes or until golden brown.
Fried Chicken Preparation

Marinate Chicken
Place chicken thighs in a bowl and cover with buttermilk. Let marinate for at least 1 hour or overnight in the refrigerator.

Coat and Fry Chicken
In a separate bowl, mix flour, salt, pepper, and paprika. Remove chicken from buttermilk and dredge in the flour mixture. Heat oil in a skillet over medium heat and fry chicken until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Cook Bacon
In a skillet over medium heat, cook bacon strips until crispy. Drain on paper towels.
Cheddar Preparation

Shred Cheddar
Grate or shred cheddar cheese and set aside for assembly.

Assemble The Franklin
Slice the biscuit in half. Layer fried chicken, bacon, and cheddar cheese on the biscuit bottom. Generously spoon sausage gravy over the top and place the biscuit top on. Serve warm.
