Biscuit Preparation

    Prepare Biscuit Dough

    Preheat your oven to 425°F (220°C). In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined. Cut the unsalted butter into small pieces and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Add Milk and Garlic

    Pour in the milk and add the minced garlic. Stir until just combined, being careful not to overmix. The dough should be slightly sticky.

    Shape and Bake

    Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter or a glass. Place the biscuits on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until golden brown.

Assembling the Sandwich

    Prepare the Filling

    While the biscuits are baking, warm the pulled pork in a saucepan over medium heat until heated through. Set aside.

    Assemble the Sandwich

    Once the biscuits are baked and slightly cooled, slice them in half horizontally. On the bottom half, layer the pulled pork, followed by the sliced ham, and then the swiss cheese.

    Add Mojo Sauce and Pickles

    Drizzle the mojo sauce over the cheese and add the house-made pickles on top.

    Top and Serve

    Place the top half of the biscuit on each sandwich. Optionally, you can grill the assembled sandwich in a pan with a bit of butter for a crispy finish. Serve with pork cracklins on the side.
