In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well combined.

Cut in the Butter
Add the unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.

Add the Milk
Pour in the milk and stir until just combined. Do not overmix; the dough should be slightly sticky.

Shape the Biscuits
Turn the dough out onto a floured surface and gently knead it 2-3 times. Pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out rounds.

Bake the Biscuits
Preheat your oven to 425°F (220°C). Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.

Cook the Sausage
In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and cooked through, about 5-7 minutes.

Sprinkle the flour over the cooked sausage and stir to combine, cooking for another minute to form a roux.

Gradually whisk in the milk, stirring constantly to prevent lumps. Bring the mixture to a simmer.

Add salt, black pepper, and red pepper flakes. Continue to cook, stirring frequently, until the gravy thickens, about 5-7 minutes.
