    Wash and peel the russet potatoes. Cut them into uniform sticks, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps remove excess starch for crispier fries.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the potatoes and pat them dry with paper towels. Fry them in batches for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.

    Season the Fries

    While the fries are still hot, sprinkle with salt and paprika to taste.

    Cook the Sausage

    In a large skillet over medium heat, add the ground sausage. Cook until browned, breaking it up with a spoon, about 5-7 minutes.

    Sprinkle the flour over the cooked sausage and stir to combine. Cook for another 2 minutes to eliminate the raw flour taste.

    Add Milk

    Gradually whisk in the milk, stirring continuously to avoid lumps. Bring the mixture to a simmer and let it thicken, about 5 minutes.

    Season the Gravy

    Add black pepper, salt, garlic powder, and onion powder to the gravy. Stir well and remove from heat.

Vegetarian Mushroom Gravy

    In a skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté until they are tender and browned, about 5-7 minutes.
