Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into uniform sticks, about 1/4 inch thick.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the potatoes and pat them dry with paper towels. Fry them in batches for about 5-7 minutes until golden brown and crispy. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt and paprika to taste.
Sausage Gravy

Cook the Sausage
In a large skillet over medium heat, add the ground sausage. Cook until browned, breaking it up with a spoon, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for another 2 minutes to eliminate the raw flour taste.

Add Milk
Gradually whisk in the milk, stirring continuously to avoid lumps. Bring the mixture to a simmer and let it thicken, about 5 minutes.

Season the Gravy
Add black pepper, salt, garlic powder, and onion powder to the gravy. Stir well and remove from heat.

Make the Roux
Sprinkle the flour over the mushrooms and stir to combine. Cook for about 2 minutes.

Add Vegetable Broth
Gradually whisk in the vegetable broth, stirring continuously. Bring to a simmer and let it thicken, about 5 minutes.

Add Soy Sauce and Season
Stir in the soy sauce, black pepper, salt, garlic powder, and onion powder. Cook for an additional 2 minutes, then remove from heat.
