    Prepare the TVP

    In a mixing bowl, combine the textured vegetable protein (TVP) with hot water. Stir well and let it sit for about 10 minutes until the TVP absorbs the water and becomes soft.

    Cook the aromatics

    In a skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the finely chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional minute.

    Mix the wet ingredients

    In a large bowl, combine the softened TVP, sautéed onion and garlic, soy sauce, maple syrup, smoked paprika, ground cumin, black pepper, and salt. Mix until well incorporated.

    Prepare the flax egg

    In a small bowl, combine the ground flaxseed with 6 tablespoons of water. Stir well and let it sit for about 5 minutes until it thickens.

    Combine all ingredients

    To the mixture of wet ingredients, add the flour, chickpea flour, nutritional yeast, mashed black beans, and the prepared flax egg. Mix until a sticky dough forms.

    Shape the patties

    Using your hands, form the mixture into small patties, about 3 inches in diameter.

    Cook the patties

    In the same skillet, add a little more olive oil if needed, and heat over medium-high heat. Place the patties in the skillet, cooking for about 4-5 minutes on each side or until golden brown and crispy.
