Biscuit Dough

Prepare the Biscuit Dough
Preheat your oven to 450°F (230°C). In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Mix well.

Cut in the Butter
Dice the unsalted butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently until just combined. Do not overmix.

Shape the Biscuits
Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle. Use a biscuit cutter to cut out rounds and place them on a baking sheet lined with parchment paper.

Bake the Biscuits
Bake in the preheated oven for 12-15 minutes or until golden brown. Remove and let cool slightly.

Marinate the Chicken
In a bowl, soak the chicken thighs in 1 cup of buttermilk for at least 30 minutes to tenderize and flavor.

Coat the Chicken
Remove the chicken from the buttermilk and let excess drip off. Dredge the chicken in the flour mixture, ensuring it is well coated.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Fry the chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove and let drain on paper towels.
Assembly

Assemble the Sandwich
Slice the biscuits in half and place a piece of fried chicken in between. Drizzle with honey and top with the other half of the biscuit.
