Chicken Sando
Seasoned Waffle Fries
Method
Chicken Sando
- 1
Prepare the Chicken
In a large bowl, marinate the chicken breasts in buttermilk for at least 1 hour, or overnight for best results.
- 2
Prepare the Breading
In another bowl, mix together the all-purpose flour, cornstarch, garlic powder, onion powder, paprika, salt, and black pepper.
- 3
Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, coating evenly. Set aside.
- 4
Fry the Chicken
In a large pot or deep fryer, heat the oil to 350°F (175°C). Carefully add the breaded chicken pieces to the hot oil and fry for about 6-8 minutes, or until golden brown and cooked through. Remove and drain on paper towels.
- 5
Assemble the Sando
Toast the brioche buns. Spread Duke's mayo on the bottom half, add a piece of fried chicken, top with house-made pickles, and cover with the top half of the bun.
