Method

Prepare the Ingredients

    Cook the Meat (if using)

    If using bacon, sausage, or chorizo, cook them in a skillet over medium heat until crispy or browned. Remove from skillet and allow to cool slightly, then chop into bite-sized pieces.

    Beat the Eggs

    In a mixing bowl, crack the eggs and add the milk, salt, and black pepper. Whisk until well combined and frothy.

Cook the Filling

    Scramble the Eggs

    In the same skillet used for the meat, add a little bit of oil or butter if needed. Pour in the egg mixture and cook over medium heat, stirring gently until the eggs are fully cooked but still soft.

    Add Cheese and Meat

    Once the eggs are nearly done, sprinkle the shredded cheddar cheese over the eggs and add the cooked meat (if using). Stir until the cheese is melted and everything is well combined.

Assemble the Burritos

    Fill the Tortillas

    Lay a flour tortilla on a flat surface. Spoon a generous amount of the egg mixture into the center of the tortilla.

    Wrap the Burrito

    Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the second tortilla.

Serve

    Add Toppings

    Serve the burritos warm with optional toppings such as salsa, sour cream, and sliced avocado on the side.
