Make the Biscuit Dough
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

Shape the Biscuits
Turn the dough onto a floured surface and knead gently until it comes together. Pat the dough to about 1-inch thick. Cut out biscuits with a round cutter and place them on a baking sheet.

Bake the Biscuits
Preheat the oven to 425°F (220°C). Bake the biscuits for 12-15 minutes or until they are golden brown. Remove from oven and allow to cool slightly.

Cook the Meat or Vegetables
In a large skillet, cook the sausage (or chicken) over medium heat until browned. If using vegetables, sauté them until tender. Remove the meat or vegetables from the pan and set aside.

Create the Sauce
Sprinkle the flour over the sautéed vegetables and stir for 1 minute. Gradually whisk in the chicken broth, then add the peas, salt, black pepper, thyme, and parsley. Bring to a simmer and cook until the mixture thickens.

Combine and Heat
Return the cooked sausage (or chicken or vegetables) to the skillet and stir to combine. Heat through for about 5 minutes, then remove from heat.
Assembly

Assemble the Dish
In individual bowls or a large serving dish, place the warm biscuit as the base. Spoon the pot pie filling generously over the biscuit.
