Biscuit Preparation

Preheat Oven
Preheat your oven to 450°F (232°C).

Mix Dry Ingredients
In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and ½ teaspoon of salt.

Cut in Butter
Cut in ½ cup of unsalted butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Milk
Stir in 3 tablespoons of milk until just combined. Do not overmix.

Form Biscuits
Turn the dough out onto a floured surface, gently knead it a few times, then pat it to about 1 inch thick. Cut out biscuits using a biscuit cutter or a glass.

Bake Biscuits
Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
Gravy Preparation

Cook Sausage
In a large skillet over medium heat, crumble and cook 1 pound of ground sausage until browned and cooked through, about 5-7 minutes.

Make Roux
Sprinkle ¼ cup of all-purpose flour over the sausage and stir well to combine. Cook for an additional 1-2 minutes.

Add Milk and Season
Slowly pour in 2 cups of milk while stirring continuously. Bring the mixture to a simmer and cook until thickened, about 5 minutes.

Season to Taste
Add 1 teaspoon of black pepper and salt to taste. Stir well to combine.
