    Preheat the oven

    Preheat your oven to 425°F (220°C).

    Mix dry ingredients

    In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 0.5 teaspoons of salt.

    Cut in butter

    Add 0.5 cups of unsalted butter to the dry mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

    Add milk

    Pour in 0.75 cups of milk and stir gently until the dough comes together. Do not overmix.

    Shape biscuits

    Turn the dough out onto a floured surface and pat it into a 1-inch thick rectangle. Cut out biscuits with a round cutter or glass.

    Bake biscuits

    Place the biscuits on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until golden brown.

    Cook sausage

    In a large skillet over medium heat, crumble and cook 1 pound of ground sausage until browned and fully cooked.

    Make roux

    Sprinkle 0.5 cups of all-purpose flour over the cooked sausage and stir to combine, cooking for an additional 2 minutes.

    Add milk and seasonings

    Gradually whisk in 2 cups of milk, stirring constantly until the mixture thickens. Add 0.5 teaspoons of salt, 0.5 teaspoons of black pepper, 0.5 teaspoons of garlic powder, and 0.5 teaspoons of onion powder.

    Simmer gravy

    Reduce heat and let the gravy simmer for about 5 minutes, stirring occasionally. Adjust seasoning to taste.

    Once the biscuits are baked, split them in half and ladle the hot sausage gravy over the top. Serve immediately.
