Method

Pulled Pork

  1. 1

    Prepare the Pork

Trim excess fat from the pork shoulder and cut it into large chunks.

  2. 2

    Season the Pork

In a large bowl, mix the smoked paprika, salt, and black pepper. Rub this mixture all over the pork pieces.

  3. 3

    Cook the Pork

Place the seasoned pork in a slow cooker. Add chopped onion, minced garlic, and apple cider vinegar. Pour BBQ sauce over the top. Cover and cook on low for 8 hours or until the pork is tender and easily shreds.

  4. 4

    Shred the Pork

Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix the shredded pork with the remaining BBQ sauce in the cooker.

Coleslaw

  1. 5

    Prepare the Vegetables

Finely slice the green cabbage and grate the carrot.

  2. 6

    Mix the Coleslaw Dressing

In a large bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Whisk until smooth.

  3. 7

    Combine Coleslaw

Add the sliced cabbage and grated carrot to the dressing. Toss well to combine. Refrigerate for at least 30 minutes before serving.

Biscuit

  1. 8

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 9

    Make the Biscuit Dough

In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined.

  3. 10

    Shape the Biscuits

Turn the dough onto a floured surface and knead gently. Pat or roll out to about 1-inch thickness. Cut out biscuits with a biscuit cutter.

  4. 11

    Bake the Biscuits

Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.

Assemble

  1. 12

    Assemble the Dish

Split the baked biscuits in half. Top each half with a generous portion of pulled pork and a scoop of coleslaw.

  2. 13

    Serve

Serve immediately while warm, and enjoy your BBQ Pulled Pork Biscuit!
