Prepare the Filling
In a mixing bowl, combine the chopped lobster meat, shredded Fontina cheese, softened cream cheese, chopped chives, salt, and black pepper. Mix until well combined and set aside.

Make the Puff Pastry
Preheat the oven to 400°F (200°C). Roll out puff pastry sheets on a floured surface and cut them into squares or circles, depending on your preference.

Assemble the Puffs
Place a spoonful of the lobster filling in the center of each pastry square/circle. Fold the pastry over and seal the edges with a fork or by pinching them together.

Bake the Puffs
Arrange the puffs on a baking sheet lined with parchment paper. Brush the tops lightly with melted butter or an egg wash for a golden finish. Bake in the preheated oven for 18-20 minutes or until puffed and golden brown.
