Prepare the Cheese Filling
In a mixing bowl, combine the grated Fontina, shredded Mozzarella, crumbled Feta, chopped parsley, salt, and black pepper. Mix until well combined.

Roll Out Puff Pastry
Preheat the oven to 400°F (200°C). On a floured surface, roll out the puff pastry sheets to about 1/8 inch thick.

Seal the Puffs
Fold the pastry over to create a half-moon shape and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.

Place the filled puffs on a baking sheet lined with parchment paper. Brush the tops with the remaining beaten egg. Bake in the preheated oven for 20-25 minutes or until golden brown.
