Method
Preparing the Sticky Rice
- 1
Rinse the Rice
Rinse the glutinous rice under cold water until the water runs clear. This helps remove excess starch.
- 2
Soak the Rice
Soak the rinsed rice in water for at least 4 hours or overnight to allow it to absorb moisture.
- 3
Cook the Rice
Drain the soaked rice and place it in a steamer lined with cheesecloth. Steam the rice over boiling water for about 30-40 minutes until tender.
Making the Coconut Sauce
- 4
Combine Ingredients
In a saucepan, combine coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar dissolves. Do not let it boil.
- 5
Mix with Rice
Once the rice is cooked, transfer it to a large bowl and pour about 3/4 of the coconut sauce over the rice. Stir gently to combine and let it sit for 15-20 minutes to absorb the flavors.
Preparing the Mango
- 6
Slice the Mango
Peel the ripe mangoes and slice them into thin strips or wedges.
Serving
- 7
Plate the Dish
To serve, place a portion of the sticky rice on a plate, top with fresh mango slices, and drizzle with the remaining coconut sauce. Optionally, garnish with sesame seeds and mint leaves.
