Method
Marinate the Chicken

Prepare Marinade
In a medium bowl, combine the soy sauce, cornstarch, egg, garlic powder, and ground ginger. Whisk until smooth.

Marinate Chicken
Cut the chicken thighs into bite-sized pieces and add them to the marinade. Mix well to coat the chicken evenly.

Chill the Chicken
Cover and refrigerate the chicken for at least 30 minutes or up to 2 hours for best results.
Prepare the Sauce

Make the Sauce
In a small bowl, combine the soy sauce, rice vinegar, sugar, sriracha, sesame oil, cornstarch, and water. Whisk until the sugar dissolves and the mixture is smooth.
Bread and Fry the Chicken

Dredge Chicken
In a shallow dish, place the all-purpose flour. Dredge the marinated chicken pieces in the flour, shaking off any excess.

Fry Chicken
Carefully add the breaded chicken pieces to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch.

Drain Chicken
Remove the chicken from the oil and drain on paper towels. Repeat with remaining chicken.
Combine and Serve

Cook Sauce
In the same pan, remove excess oil, leaving about 1 tablespoon. Add the prepared sauce and bring to a simmer over medium heat.

Toss Chicken
Once the sauce starts to thicken, add the fried chicken to the pan. Toss to coat the chicken evenly with the sauce.

Garnish
Garnish with sesame seeds and sliced green onions before serving.

Serve hot over steamed rice or noodles.
