Preparing the Cheese

Heat the Milk and Cream
In a large pot, combine the whole milk and heavy cream. Place over medium heat and stir gently. Heat the mixture until it is steaming but not boiling.

Add Lemon Juice
Once the milk and cream mixture is steaming, add the lemon juice gradually while stirring. You should see the curds start to separate from the whey.

Let it Rest
Remove the pot from the heat and let it sit for about 10 minutes. This allows the curds to fully form.

Strain the Curds
Line a colander with cheesecloth and place it over a large bowl. Carefully pour the curds and whey into the colander, allowing the whey to drain. Gather the cheesecloth and tie it off to form a pouch.

Rinse and Season
Rinse the curds under cold water to wash away the lemon juice flavor. After rinsing, add salt and any optional herbs or spices (like oregano or black pepper) and mix gently.

Press the Cheese
To help the cheese firm up, place the cheese pouch under a weight (such as a heavy pot) for 30 minutes.

After pressing, unwrap the cheese from the cheesecloth. Store the cheese in an airtight container in the refrigerator.
