    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Sauté the Vegetables

    In a large oven-safe skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add Greens and Asparagus

    Add the chopped escarole and grilled asparagus tips to the skillet. Cook for another 3-4 minutes until the escarole is wilted.

    Incorporate Piquillo Peppers

    Stir in the roasted piquillo peppers and season with salt and black pepper.

    Prepare the Egg Mixture

    In a mixing bowl, whisk the eggs and then pour the mixture over the sautéed vegetables in the skillet. Gently stir to combine.

    Add Goat Cheese

    Sprinkle the crumbled goat cheese evenly over the top.

    Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the eggs are set and the top is lightly golden.
