    Prepare the Shrimp

    In a bowl, soak the shrimp in buttermilk for about 30 minutes.

    Mix the Dry Ingredients

    In a separate bowl, combine flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper.

    Coat the Shrimp

    Remove shrimp from buttermilk, allowing excess to drip off. Dredge shrimp in the flour mixture until well coated.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Shrimp

    Carefully add the coated shrimp in batches and fry for 2-3 minutes or until golden brown. Remove and drain on paper towels.

    Prepare the Sauce

    In a small bowl, mix mayonnaise and hot sauce to taste.

    Assemble the Po' Boys

    Split the submarine rolls and spread a layer of the sauce on each side. Add fried shrimp, lettuce, and sliced tomatoes.

    Serve immediately while hot and crispy.
