Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, until the onions are caramelized and golden brown, about 25-30 minutes.

    Add Ingredients

    Add the white wine to the pot, scraping up any browned bits from the bottom. Allow it to simmer for about 5 minutes. Then add the vegetable broth, thyme, bay leaf, salt, and black pepper.

    Simmer the Soup

    Bring the soup to a boil, then reduce the heat and let it simmer uncovered for about 30 minutes.

    Prepare Crostini

    While the soup is simmering, preheat the oven to 400°F (200°C). Slice a baguette into thin slices, drizzle with olive oil, and toast in the oven for about 10-12 minutes until golden brown.

    Serve

    Remove the bay leaf from the soup. Ladle the soup into bowls, top with a slice of toasted baguette, and sprinkle with provolone cheese. Optionally, place under the broiler for a couple of minutes until the cheese is bubbly and golden.
