Method

Cooking the Hash

    Prepare the Vegetables

    Dice the poblano pepper and potatoes into small cubes.

    Cook the Hash

    In a skillet, heat olive oil over medium heat. Add the diced poblano and potatoes, season with salt and black pepper, and cook until the potatoes are tender and golden brown, about 10-15 minutes.

Cooking the Meats

    Cook the Bacon

    In another skillet, cook the pecan smoked bacon until crispy. Remove and drain on paper towels.

    In the same skillet, cook the sausage link until browned and cooked through, according to package instructions.

    Cook the eggs to your desired style (fried, scrambled, poached, etc.) in a non-stick skillet.

Making the Biscuit & Gravy

    Prepare the Biscuits

    Follow the instructions on the biscuit mix to prepare and bake the biscuits.

    Make the Gravy

    In a skillet, cook the sausage link until browned. Remove the sausage and use the drippings to make a roux with flour, then gradually add milk to create a creamy gravy. Season with sage, salt, and pepper.
