    Prepare the Ingredients

    Chop the chorizo, bacon, ham, shallots, and chives. Roast the mushrooms if not already prepared.

    Cook the Meats

    In a large skillet, heat the olive oil over medium heat. Add the chorizo, bacon, and ham, and cook until browned and crispy.

    Add Shallots and Mushrooms

    Add the chopped shallots and roasted mushrooms to the skillet. Cook for an additional 3-4 minutes until the shallots are translucent.

    Whisk the Eggs

    In a separate bowl, whisk together the eggs, salt, and black pepper until well combined.

    Combine and Cook

    Pour the egg mixture into the skillet over the meat and vegetable mixture. Cook on medium-low heat until the edges start to set, about 5-7 minutes.

    Add Cheese and Finish Cooking

    Sprinkle the shredded smoked Gouda cheese on top. Transfer the skillet to a preheated oven at 180°C (350°F) and bake for 10-15 minutes or until the center is set.

    Prepare Chive Cream

    In a small bowl, mix the sour cream with the chopped chives. Season with salt and pepper to taste.

    Remove the frittata from the oven, let it cool slightly, then slice and serve with chive cream and salsa on the side.
