Prepare the Chicken
Preheat your grill or skillet over medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper. Grill or cook the chicken for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C).

Cook the Bacon
In a skillet over medium heat, cook the bacon strips until crispy. Remove and drain on paper towels.

Assemble the Sandwich
On one slice of Texas toast, spread a layer of chipotle aioli. Place the grilled chicken on top, followed by the smoked gouda slices, lettuce, tomato slices, and crispy bacon. Drizzle BBQ sauce over the top and finish with another slice of Texas toast.
