Prepare the Short Ribs
Season the short ribs with salt and pepper. Heat vegetable oil in a large pot over medium-high heat. Sear the short ribs on all sides until browned, about 4-5 minutes per side.

Cook the Short Ribs
Add hoisin sauce and cherry preserves to the pot. Cover and reduce heat to low. Cook for about 2.5 to 3 hours or until the meat is tender and falling off the bone.

Make the Slaw
While the ribs are cooking, julienne the daikon and carrot. In a bowl, mix the daikon, carrot, rice vinegar, and a pinch of salt. Set aside to marinate.

Prepare Sriracha Kewpie Sauce
In a small bowl, mix the kewpie mayonnaise and sriracha sauce. Adjust the sriracha to taste for desired heat.

Assemble the Tacos
Once the short ribs are cooked, shred the meat. Fill taco shells with shredded short ribs, top with daikon and carrot slaw, and drizzle with sriracha kewpie sauce.
