    Roast the Mushrooms

    Preheat the oven to 200°C (400°F). Clean the mushrooms and slice them if large. Toss them with olive oil, salt, and pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden and tender.

    Caramelize the Onions

    While the mushrooms are roasting, thinly slice the onion. In a skillet over medium heat, add a tablespoon of olive oil. Add the onions, a pinch of salt, and cook slowly for about 15-20 minutes, stirring occasionally, until they are caramelized and golden brown.

    Assemble the Dish

    Once the mushrooms are roasted and the onions are caramelized, remove them from the heat. On a serving platter, layer the roasted mushrooms, dollops of pesto, and the caramelized onions. Tear the burrata into pieces and arrange it on top.

    Add the Finishing Touches

    Top the dish with fresh arugula. Drizzle with truffle honey and balsamic vinegar to taste. Season with additional salt and pepper if desired.
