    Prepare the Bacon

    Lay the thick-cut bacon strips on a large baking sheet or tray. Make sure they are not overlapping.

    Season the Bacon

    In a small bowl, mix together black pepper, brown sugar, garlic powder, onion powder, smoked paprika, and salt. Sprinkle the seasoning mixture evenly over both sides of the bacon.

    Soak the Wood Chips

    In a bowl, soak the pecan wood chips in water for at least 30 minutes before smoking.

    Set Up the Smoker

    Preheat your smoker to 225°F (107°C) and add the soaked pecan wood chips to the smoker box or wrap in aluminum foil and poke holes in it, placing it directly on the heat source.

    Once the smoker is ready, place the seasoned bacon strips on the smoker racks. Smoke for 1.5 to 2 hours or until the bacon reaches your desired level of crispiness.
