Preparation

    Prepare the Pork Chop

    Season the tomahawk pork chop with salt and black pepper. Rub with olive oil and set aside to marinate for at least 30 minutes.

    Cook the Potatoes

    Peel and cut the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and mash with butter, milk, salt, and black pepper.

    Sauté the Mushrooms

    In a pan, heat olive oil and sauté minced garlic until fragrant. Add mixed wild mushrooms and cook until tender. Season with salt and pepper.

Cooking

    Grill the Pork Chop

    Preheat the grill to high heat. Grill the pork chop for about 5-7 minutes on each side, or until it reaches an internal temperature of 145°F (63°C).

    Grill the Broccolini

    Toss the broccolini with olive oil, salt, and pepper. Grill for about 3-4 minutes until slightly charred and tender.

    Prepare the Sauce

    In a saucepan, melt butter and add Marsala wine. Simmer until reduced by half. Stir in chopped fresh parsley.

    Assemble the Dish

    Slice the grilled pork chop and layer with capicola and fontina cheese. Serve with Tuscan style mash, grilled broccolini, and drizzle with Marsala sauce.
