    Prepare the Chicken

    In a large bowl, marinate the chicken thighs in buttermilk for at least 2 hours, or overnight for best results.

    Dredge the Chicken

    In a separate bowl, mix flour, cayenne pepper, paprika, garlic powder, salt, and black pepper. Remove chicken from buttermilk and dredge each piece in the flour mixture until fully coated.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken in batches until golden brown and cooked through, about 6-8 minutes per side. Remove and drain on paper towels.

    Make the Hot Sauce

    In a bowl, mix hot sauce with a bit of the leftover frying oil to add flavor. Adjust the spice level by adding more cayenne if desired.

    Assemble the Sandwich

    Spread sriracha Kewpie mayo on the bottom half of each brioche bun. Add fried chicken, drizzle with hot sauce, and top with pickles. Cover with the top half of the bun.
