Method

Directions

  1. 1

    Prepare the Salsa

In a bowl, combine the diced pineapple, mango, red onion, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

  2. 2

    Make the Avocado Dressing

In a blender, combine the avocado, Greek yogurt, lime juice, minced garlic, and salt. Blend until smooth and creamy. Adjust seasoning as necessary.

  3. 3

    Prepare the Mahi Mahi

Preheat a grill or skillet over medium-high heat. Rub the Mahi Mahi fillets with olive oil, cumin, paprika, and salt. Grill or cook for about 4-5 minutes per side, until cooked through and flaky.

  4. 4

    Warm the Tortillas

Heat corn tortillas on the grill or in a skillet for about 30 seconds on each side until they are warm and pliable.

  5. 5

    Assemble the Tacos

On each tortilla, place a piece of grilled Mahi Mahi, a handful of watercress, a spoonful of pineapple mango salsa, and drizzle with avocado dressing. Serve immediately.
