Method

Prepare the Anchovies

  1. 1

    Fry the Anchovies

Heat the vegetable oil in a frying pan over medium heat. Coat the anchovy fillets in flour, then dip them in the beaten egg, and finally coat with breadcrumbs. Fry the anchovies in the hot oil until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Prepare the Crostini

  1. 2

    Make the Crostini

Preheat the oven to 400°F (200°C). Slice the baguette into 1/2-inch thick slices. Brush each slice with olive oil and sprinkle with minced garlic. Arrange on a baking sheet and toast in the oven for 5-7 minutes, or until golden brown.

Grill the Romaine

  1. 3

    Grill the Romaine Hearts

Cut the romaine hearts in half lengthwise. Brush with olive oil and season with salt and pepper. Grill on a preheated grill for about 2-3 minutes on each side until slightly charred.

Assemble the Salad

  1. 4

    Combine and Serve

In a large serving platter, place the grilled romaine. Drizzle with lemon juice and sprinkle with grated Parmesan cheese. Top with fried anchovies and serve with crostini on the side.
